Easy Ham & Cheese Quiche

Have you ever made a ham and are left with a TON of leftovers? Because, same. Wondering what to do with some of that leftover ham? Look no further; it’s time to make my infamous quiche.

Ingredients:

-1 pound (give or take) ham, chopped

-Shredded cheese (your choice! I personally use cheddar)

-4 eggs

-Milk

-Pie crust (I use Pillsbury ready-to-bake crusts!)

-Mushrooms (optional)

-Spinach (optional)

-Minced Garlic (optional)

How To:

*Preheat oven to 350 degrees F.

*Roll pie crust over a well greased pie dish.

*Whisk eggs, ham, shredded cheese and a few splashes of milk together; season with salt and pepper; set aside.

*Chop mushrooms (as much as you’d like!) and add them to a hot pan with a few teaspoons of minced garlic. Sauté for about 5 minutes.

*After 5 minutes, add spinach (again, optional). I add either an entire small package of baby spinach or 5-6 handfuls from the big package. Remember, sautéing spinach will cause it to wilt to almost nothing, so the more the merrier here.

*Once the spinach is wilted, add to the egg mix and combine well.

*Pour this into the pie crust.

*Bake for 20 minutes UNCOVERED. Then, for the last 10-15 minutes, cover with foil to prevent any burning.

*Let cool before cutting into and enjoy!
